The big chests with a eye on them will lock themselves if you get close to them but there is a easy way to open them.

After progressing a little more in the main storyline,  you will learn the Disillusionment spell which you can use to turn invisible.

Use the invisibility spell (Disillusionment) before getting close to the eye chests and then open them after getting close to them.
